This recipe is packed with veggies & flavor! It’s great to prep for lunches for the week, or as a summer side dish.

Ingredients

  • Ramen, soba, or rice noodles (I used this one)
  • 1 red bell pepper
  • 2 carrots
  • ¼ purple cabbage
  • 2 green onions
  • 2 heads baby bok choy
  • 1 bunch cilantro
  • ½ cup tahini
  • Juice of 1 lime & lime wedges to top
  • ½ TBSP sriracha
  • ½ TBSP maple syrup
  • 1 TBSP tamari
  • 1 TSP fresh ginger
  • 1 clove garlic minced
  • 1 TBSP rice vinegar
  • Salt to taste
  • Black sesame seeds
  • ¼ cup slivered almonds
  • *Could add tofu or chicken for main meal

Instructions

Cook noodles according to package instructions. Run under cold water after straining.

Chop all vegetables & cilantro.

Make the dressing: mix tahini, lime, sriracha, maple syrup, tamari, ginger, garlic, rice vinegar, and salt.

Combine cold noodles with chopped veggies and slivered almonds. Pour dressing on top and mix.

Garnish with cilantro, lime wedge, and sesame seeds.
