Ingredients

  • 1 Asian pear
  • Spring mix & arugula
  • ¼ cup pepitas
  • ¼ cup walnuts
  • 1 avocado
  • Goat cheese
  • 1 cucumber
  • Maple syrup
  • ½ tsp cinnamon
  • ¼ teaspoon nutmeg
  • Dressing

Instructions

Thinly slice Asian pear, cucumbers, and avocado

Toast walnuts and pepitas with maple syrup (enough to lightly cover), salt, cinnamon, and nutmeg in oven at 350 degrees for 5-10 minutes.

Add Asian pear, cucumber, and avocado to lettuce. Top with toasted walnuts, pepitas, and goat cheese.

Dress salad & serve!
