Craving Chipotle but wanting a healthier alternative? This recipe is for you. I grew up on rice, beans, and avocado so this recipe really brings me back (with an adult twist – aka the veggies).

Quick & Easy Burrito Bowl

Ingredients

  • 1 cup rice
  • 1 can pinto beans
  • 1 avocado
  • 1 zucchini
  • 5 baby bell peppers (or ½ red bell pepper)
  • Shredded cheddar cheese
  • Lettuce
  • 1 tsp cumin
  • 1 tsp dried oregano
  • Pico de Gallo

Instructions

Cook rice according to instructions

Chop zucchini and bell pepper

Sauté zucchini and bell pepper over medium-high heat in 1 tbsp avocado oil seasoned with salt, cumin, and oregano.

Heat up pinto beans

Chop lettuce and avocado

Over rice add pinto beans, sautéed vegetables, lettuce, Pico de Gallo, lettuce, and avocado.
