Salmon, Rice, Dill Cucumbers

Ingredients

  • 1 cup rice
  • 2 cloves garlic
  • Wild sockeye salmon (1.5-2.0 lbs)
  • Extra virgin olive oil (EVOO)
  • 1 lemon
  • 3 cucumbers
  • 1 bunch dill
  • Apple cider vinegar (1/2 cup)
  • Salt and pepper to taste
  • Mayo (3 TBSP)
  • Black sesame seeds (optional)

Instructions

Cook rice according to package instructions

Mince garlic. Add EVOO, salt and pepper, garlic, and lemon slices to salmon in tinfoil. Grill salmon for 9-11 minutes at 400 degrees or bake at 420 degrees in oven.

Make the cucumbers: thinly slice and add to a bowl. Chop dill. Mix cucumbers with mayo, apple cider vinegar, dill, and salt. Coat and mix cucumbers.
