This is a summer staple in our house! It’s easy and refreshing for those hot summer nights.
Cook rice according to package instructions Mince garlic. Add EVOO, salt and pepper, garlic, and lemon slices to salmon in tinfoil. Grill salmon for 9-11 minutes at 400 degrees or bake at 420 degrees in oven. Make the cucumbers: thinly slice and add to a bowl. Chop dill. Mix cucumbers with mayo, apple cider vinegar, dill, and salt. Coat and mix cucumbers. Assemble Salmon, Rice, Dill Cucumbers
