I LOVE a good fall salad. What makes this one so special is the cider dressing with apple cider vinegar and cider to lightly sweeten it. When I think of a fall (or winter) salad I think craisins and pecans are a go to. Topping this with a little bit of gorgonzola is my personal favorite with the apple slices.
Toast pecans with enough maple syrup to cover, salt (to taste), and smoked paprika in oven at 350 degrees for 5-10 minutes Chop lettuce Thinly slice apple and avocado Grate carrot Make the dressing: combine extra virgin olive oil, apple cider vinegar, thyme, garlic, smoked paprika, lemon juice, Dijon mustard, and cider On top of lettuce add carrot, sliced avocado, apples, craisins, toasted pecans Optional: top with goat cheese or gorgonzola Dress salad Fall Salad
